Here's a "health-nut" recipe that sounds weird, but is so so so good.  Quinoa is a grain, found mostly in health food stores...I haven't found it at my Publix yet.

QUINOA SALAD WITH TOASTED PISTACHIOS AND DRIED PINEAPPLE

1 1/2 cups water
3/4 cup uncooked quinoa (rinse it before cooking to wash off the bitter protectant)
1/4 cup shelled, chopped pistachios (about 1 oz)
2 cups rotisserie chicken breast, chopped (I omitted this, and it was still yummy)
1/3 cup chopped green onions
1/3 cup chopped dried pineapple
1 TBSP toasted sesame oil
1 1/2 tsp bottled ground ginger
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp crushed red pepper (or less, since this makes it spicy...I start with less, then add more to taste.)

Boil water in a small saucepan.  Add quinoa.  Cover, reduce heat, and simmer 12 minutes.

Heat a small skillet over medium-high heat.  Add chopped pistachios, and cook 2 minutes or until lightly toasted, stirring frequently.  Transfer pistachios to a large bowl; add cooked quinoa and remaining ingredients to bowl.  Toss gently to coat.

Mmmm....sounds good.  I love the stuff!  Also, don't forget to rinse it...it's supposed to be bitter before rinsing.

Yay!!!!

One more tip - it's really good if you cook it in chicken broth (beef broth, mushroom broth, etc) instead of water.  Just substitute it equally.  I use "Better than Broth", sold at most health food stores as well as Publix.

Um...not sure.  that is the brand name.  It's just the type we use...it lasts a long time because you have to mix it with the water, from a jar, rather than use it from a can or box, or even the cubes.

I use white quinoa...never heard of red before.  Let me know how it tastes!
