This is another recipe that I don't use exact measurements with  Undecided  Adjust spices and oil according to taste.


4 medium red potatoes (or 6 - 8 small)
2 - 3 tsp dried and crushed rosemary
1 - 2 tsp dried and crushed thyme
1 - 2 TBSP olive oil


Cut potatoes into 1 inch chunks.
Drizzle potatoes with oil.  Stir to coat.
Sprinkle spices, and stir well.
Bake at 450 F for 20 - 25 minutes; potatoes should be easily pierced with a fork. 


***NOTE: You can use potatoes, carrots, parsnips, and onions (or any combination) in this recipe.  Just adjust spices and oil accordingly.
