This dish is great for a warm dip with chips or to just serve over rice. 

Olive oil
1 med onion, chopped
1 med. green pepper, chopped
1 can pink beans (habichuelas rosadas)
Can of diced tomatoes or tomato sauce (it doesn't matter which you use...I like the tomato chunks so I use the diced tomatoes)
1/4 cup of water
Small bunch of cilantro


Saute the onion and green pepper in olive oil over medium heat until tender.  Add tomatoes/sauce and beans; stir.  Add water and mix in.  Cover and simmer for 20 minutes.  Remove from heat and stir in the cilantro. 


***You can also skip the simmering step, and it's just as good.  Just leave out the water.***

I'm not the best person to ask...the only beans I've found that I don't care for are the white cannenelli bean and adzuki bean.  I like them though.  Thankfully, a can of beans is fairly cheap, so if you don't like it, it's not a complete waste of money! Smiley
